Observed half bottle of verde sauce and half bottle of spicy sauce in the bottom of the make-line cooler with internal temperature of 56-57 degrees. Observed quaternary sanitizer solution at a concentration less than 200 ppm. Quaternary ammonium sanitizing solution at incorrect temperature, concentration and/or water hardness (critical, corrected). Observed can opener blade with visible residue. Equipment food-contact surfaces or utensils are unclean (critical, corrected). Discontinue use of machine, and use three-compartment sink until machine can have proper concentration. Observed mechanical chlorine warewashing machine at a concentration of less than 10 ppm. Chlorine sanitizing solution at incorrect temperature and/or concentration (critical). Observed chlorine bucket with concentration over 200 ppm. Chlorine sanitizing solution at incorrect temperature and/or concentration (critical, corrected). Observed several uncovered items throughout the facility. Food not properly protected from contamination by separation, packaging and segregation (critical, corrected). Ensure nothing other than handwashing is happening at the handwashing sink. Observed employee take knife soaking in bleach to the handwashing sink to rinse off bleach. Handwashing sink is being used for purposes other than handwashing (critical, corrected). PIC unable to demonstrate knowledge by having no critical violations (critical repeat). Ensure utensils are being washed, rinsed, and sanitized at the three-compartment sink or mechanical warewashing machine.
